Recipe #1: Lemon Biscotti

Cooking Times

  • Prep Time: 1 Hour
  • Cook Time: 8 Minutes
  • Total Time: 1 hour 8 Minutes

Ingredients

  • 2 cups all-purpose flour
  • 2 eggs
  • 1 stick butter, room temperature
  • 1/2 cup sugar
  • 3 tsp baking powder
  • 1 tsp lemon extract
  • 1/4 tsp salt
  • 1 1/2 cups powdered sugar
  • 1 tsp lemon extract
  • 4 tbsp milk
  • sprinkles (optional)

Directions

Step 1: Preheat over to 350 degrees.

Step 2: Combine softened butter and sugar until light and fluffy.

Step 3: Add eggs, one at a time, and lemon extract.

Step 4: Slowly add flour, baking powder and salt. 

Step 5: Chill in fridge for 5 minutes or until easy to handle.

Step 6: Pinch about a 1 inch of dough and between your hands roll dough into a ball.

Step 7: Place on ungreased cookie sheet. Bake at 350 degrees for 7 to 8 minutes or until bottom of cookie is slightly brown. Cool on wire rack.

Step 8: Make the glaze by combining powdered sugar, lemon extract and milk. 

Step 9: Dip cookies in glaze, top with sprinkles and place on cookie rack.

Step 10: Once glaze hardens, put in air tight container or freeze. 


Recipe #2: Orange Chocolate Chip Biscotti

Orange Chocolate Chip Biscotti

Cooking Times

  • Prep Time: 1 Hour 10 Minutes
  • Cook Time: 45 Minutes
  • Total Time: 1 hour 55 Minutes

Ingredients

  • 2 Cups Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 Stick Butter, Softened 
  • 1 Cup Sugar
  • 2 Eggs
  • 1/2 tsp Vanilla
  • 1/4 tsp Almond Extract
  • 1 cup chocolate chips
  • 2 tbsp Orange Zest

Directions

Step 1: Preheat oven to 350F. Line a baking sheet with parchment.

Step 2: Cream the butter and sugar together until light and smooth. Beat in the eggs one at a time, then beat in the vanilla and almond extracts, stir in zest. 

Step 3: Add in flour, baking powder and salt.

Step 4: Once combined, fold in chocolate chips. 

Step 5: Chill the dough for an hour. Halve the dough and form into two even loaves.

Step 6: Bake for 30-35 minutes or until cooked through..

Step 7: Cool the loaves for 10 minutes. Lower the oven temperature to 325 degrees.

Step 8: Slice into 3/8″ thick slices, then bake for 15 minutes. 

Step 9: Allow to cool and the storage in an airtight container.


Recipe #3: White Chocolate Cranberry Cookies

White Chocolate Cranberry Cookies

Cooking Times

  • Prep Time: 10 Minutes
  • Cook Time: 10 Minutes
  • Total Time: 20 Minutes

Ingredients

  • 3 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter, room temperature
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 egg
  • 2 cups dried cranberries, I used Craisins
  • 2 cups white chocolate chips

Directions

Step 1: Preheat oven to 350°

Step 2: Beat butter, egg, brown sugar, sugar and vanilla together until combined.

Step 3: Slowly dd in flour, baking soda, and salt together. Mix until combined.

Step 4: Fold in white chocolate chips and dried cranberries.

Step 5: Drop by rounded teaspoons on ungreased or parchment lined cookie sheet.

Step 6: Bake for 10 minutes.

Step 7: Remove from oven. Transfer to cookie rack and allow to cool before playing in air tight container.
