Recipe #1: Wonton Soup w/ Bok Choy

Ingredients
- 1/2 cup chopped onion
- 1/4 cup chopped green onions
- 1/4 cup julienne cut carrots
- 2 tbsp fresh ginger, grated
- 2 cloves minced garlic
- 1 tablespoon olive oil
- 4 cups chicken broth
- 10 frozen wontons (pre-made chicken, shrimp or vegetarian)
- 4 heads bok choy, washed and kept whole
garnishes: cilantro, green onions, sesame seeds, chili flakes, lime
Directions
- Step 1: Heat olive oil in a large pot. Saute onion, green onion, carrots, ginger, and garlic for five minutes.
- Step 2: Add chicken broth and bring to boil.
- Step 3: Add frozen wontons and simmer for five minutes. Add bok choy. Continue to simmer for another five minutes.
- Step 4: Remove from heat.
- Step 5: Place soup in serving bowls, garnish, and enjoy.

- 4 cloves garlic, minced
- 8 cups Chicken broth
- 1 tbsp Olive Oil
- 1 cup carrots, diced
- 1 cup yellow onion, diced
- 1 cup celery, diced
- 1 cup zucchini, diced
- 1 1/2 cups pre-made meatballs (can be frozen)
- 1 tbsp Italian seasoning
- ¾ cup Pastina, Orzo or any other small pasta of choice (uncooked)
- 1 handful fresh Spinach
Directions
- Step 1: Heat olive oil in a large soup pot or dutch oven over medium-high heat.
- Step 2: Add the garlic and saute 1 minute.
- Step 3: Add the onions, carrots, and celery and saute for 5 minutes.
- Step 4: Add the chicken broth and pre-made mini meatballs.
- Step 5: Bring to a boil.
- Step 6: Reduce heat and simmer for 10 minutes.
- Step 7: Add pasta or any pasta of choice, zucchini, and fresh spinach.
- Step 8: Continue to simmer for another 15 minutes or until noodles are fully cooked.
- Step 9: Remove from heat. Garnish with Parmesan cheese and serve with crusty bread!

- Step 1: Heat olive oil in a large pot over medium heat. Add onions and garlic and sauce for 5 minutes.
- Step 2: Add sausage and cook until brown.
- Step 3: Add carrots, beans, broth, tomatoes, and Italian Seasoning.
