Recipe #1: Tomato Focaccia Bread

Cooking Times

  • Prep Time: 1 Hour 45 Minutes
  • Cook Time: 20 Minutes
  • Total Time: 2 Hours 5 Minutes

Ingredients

  • 1 1/3 cup warm water 
  • 2 teaspoons sugar 
  • 1 (0.25 ounce) package active dry yeast
  • 3 1/2 cups all-purpose flour
  • 1/4 cup olive oil
  • 2 teaspoons sea salt
  • 3 sprigs fresh rosemary, needles separated and  lightly chopped
  • 1/2 cup sliced cherry tomatoes

Directions

Step 1: In a bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes or until the mixture becomes frothy.

Step 2: Stir olive oil and sea salt into yeast mixture.

Step 3: Before adding flour to the mixture, one cup at a time.

Step 4: Once it’s completely blended, knead the dough on a floured surface. You can also use a kitchen aide mixture for this step.

Step 5: Shape the dough into a ball and place it in a greased mixing bowl. Cover with saran wrap and a towel.

Step 6: Let dough rest in a warm location for an hour. 

Step 7: Once the dough has doubled in size, take the dough out and place and shape in a cast iron skillet that is greased. Cover the dough again with saran wrap and a towel and allow it to rest around 30 minutes.

Step 8: Heat over to 400 degrees. When the oven is heating, poke holes all over the dough. Drizzle with olive oil, chopped fresh rosemary, sliced cherry tomatoes, and sea salt.

Step 9: Bake for 20 minutes or until bread is slightly golden and browned.

Step 10: Remove from oven and serve warm.

Recipe #2: Sage and Onion Bread

  • Total Time: 1 Hour 25 Minutes

Ingredients

  • 2 large sweet onions, chopped 
  • 2 teaspoons sage
  • 2 teaspoons pepper
  • 2 tablespoons butter
  • 2 envelopes dry yeast
  • 1 tablespoon sugar
  • 1 1/2 cups warm water
  • 2 tablespoons olive oil
  • 5 cups all purpose flour

Topping Ingredients

  • 2 tablespoons sea salt
  • 1 tablespoon sage
  • 2 tablespoons rosemary
  • 2 tablespoons olive oil

Directions

Step 1. In a large skillet heat butter. Add chopped onions, sage, and pepper. Stir regularly until onions are tender.

Step 2. Using a small bowl combine yeast, sugar, and warm water. Stir until dissolved. Let sit for 5 minutes, until frothy then add 1 tablespoon of olive oil and mix well. 

Step 3. In a separate bowl, combine flour,  yeast mixture, and cooled onions mixture.

Step 4. Knead dough by hand, adding more flour if needed until a smooth dough is formed. 

Step 5. Lightly oil a bowl and place dough ball, cover with saran wrap and a towel. Allow resting for an hour or until double the size.

Step 6. Once the dough is double the size, punch down and divide into two equal parts. 

Step 7. Shape each part into a round loaf.

Step 8. Grease a baking sheet with butter or shortening and add loaves.

Step 9. Brush loaves with olive oil. Sprinkle loaves with fresh rosemary, sage, and salt. Let sit for 10 minutes.

Step 10. Preheat your oven to 350 degrees, bake loaves for 35-45 minutes.

Step 11: Remove from oven and serve warm.

Ingredients

  • • 2 1/4 cups all purpose flour
  • • 1 tablespoon baking powder
  • • 1 teaspoon salt
  • • 4 tablespoons finely sliced chives
  • • 3 large eggs,
  • • 1 1/2 cups milk
  • • 6 tablespoons olive oil
  • • 8 slices of bacon, chopped, cooked and drained
  • • 2 cups shredded cheddar cheese

Directions

Step 1: Preheat your oven to 350 degrees.

Step 2: In a large bowl, whisk together the flour, baking powder, salt, and chives. 

Step 3: Slowly add eggs in the flour mixture, followed by milk and olive oil.

Step 4: Fold in bacon and 1 1/2 cups cheddar cheese into the mixture.

Step 5: Pour into grease loaf pan and top with the remaining 1/2 cup cheddar cheese

Step 6: Bake the loaf for 40 to 45 minutes

Step 7: Let cool for 10 minutes and enjoy warm.
